Easy DIY Champagne Cupcakes

One of my favorite cakes is Strawberry Champagne from a small bakery in Santa Barbara. Since Quarantine season, I've been passing time by baking - everything from churro bars, to lemon squares to banana pudding...every weekend is a new dish!

I've been trying to find new recipes, especially ones that don't require too many ingredients...in come Champagne Cupcakes. This is the perfect treat for any celebration! Birthdays, bridal showers, bachelorettes, New Year's, promotions, new babies, surviving Monday's...no matter the celebration.

This is super simple to make - all you'll need is 2 important ingredients, a boxed cake mix (I suggest either Strawberry or Vanilla) and your favorite champagne. Follow the recipe as stated on the back of the box, just substitute your favorite champagne for the water! But, for an extra moist cake, add vanilla pudding. Easy as that.

  • 1 Box of Vanilla Cake
  • 4 Eggs
  • 1/4 cup of Oil
  • 1 1/4 cups of Champagne
  • 1 box of Jello instant vanilla pudding

Mix your cake mix with eggs and oil and pop the champagne! Lastly, mix in your Jello pudding. Follow the rest of the directions on the back of the box in regards to the temperature.

For the frosting, I suggest using buttercream, or a whipped frosting! And there you have it, delicious and festive goodies!
